Leave the currants to soak for half an hour in a bowl of warm water.Cook the pumpkin in the oven, when it is ready leave it to cool and then mash with a potato masher.Cook the apples and mash them with a fork, forming a cream.
Break the eggs into a bowl and beat them with a whisk, adding the sugar, then the oil; incorpo-rate the flour little by little, and when the flour is completely absorbed, add the other ingredients and mix everything well.Grease the baking tin, pour the mixture into it and cook in a preheated oven at 180 °C for about 40 minutes.Once the cake is cool, turn it out onto a serving dish, dust with icing sugar and serve.
